Virgin Coconut Oil Specifications: FFA, Moisture and Peroxide Value for Bulk Buyers

Econutrena has manufactured and exported coconut products from Sri Lanka for 35+ years under Jaindi Exports, holding BRC AA, IFS 92.74%, ISO 22000, USDA Organic, Vegan, Halal, Kosher, Fair Trade and Rainforest Alliance certification.

Virgin coconut oil specifications are the lab limits that prove an oil is genuine, fresh VCO: free fatty acid (FFA) of no more than 0.2%, moisture of no more than 0.1% and peroxide value of no more than 3 meq/kg, under the APCC quality standard. Food manufacturers, importers and private label brands use these figures to approve a supplier, accept each lot and spot refined or old oil sold as virgin. Econutrena supplies cold-pressed, organic virgin coconut oil from Sri Lanka in 200L drums and retail glass or PET bottles, with a Certificate of Analysis for every lot. The three numbers to check first on any VCO COA are FFA, moisture and peroxide value.

What Makes Coconut Oil "Virgin"?

Virgin coconut oil is pressed from fresh, mature coconut kernel without refining, bleaching or deodorising (RBD). Because it is not refined, its quality depends entirely on fresh raw material and careful processing. Refining can hide poor raw material in RBD oil; in VCO, lab results show it.

"Extra virgin" is a marketing term for coconut oil. No international standard defines it, so always buy against the lab specification rather than the label.

Virgin Coconut Oil Specifications: The APCC Standard

The most widely used VCO specification is the quality standard from the Asian and Pacific Coconut Community (APCC), now the International Coconut Community (ICC). National standards in the Philippines, Indonesia, Malaysia and Thailand follow similar limits.

ParameterAPCC limitWhat it tells you
Free fatty acid (as lauric acid)Max 0.2%Freshness and raw material quality
MoistureMax 0.1%Risk of spoilage and rancidity in storage
Peroxide valueMax 3 meq/kgOxidation, the start of rancidity

Free fatty acid (FFA)

FFA measures how much fat has broken down into free fatty acids, usually because of old, damaged or poorly dried kernel. A VCO above 0.2% FFA is likely to taste soapy or sharp and will have a shorter shelf life. FFA is the fastest single check of raw material freshness.

Moisture

Water left in the oil allows enzymes and microbes to break the fat down during storage. Keeping moisture at or below 0.1% is one of the main reasons well-made VCO can reach a 24-month shelf life.

Peroxide value (PV)

Peroxide value measures early oxidation caused by heat, light and air. The APCC limit of 3 meq/kg is five times stricter than the Codex limit for general coconut oil, which reflects how fresh true VCO should be when it leaves the factory.

Fatty Acid Profile: How to Confirm It Is Pure Coconut Oil

The fatty acid profile is the fingerprint of coconut oil. It is the best test for blending with cheaper oils, such as palm kernel oil.

Fatty acidAPCC range (%)
Caprylic (C8:0)4–10
Capric (C10:0)4–8
Lauric (C12:0)45–56
Myristic (C14:0)16–21
Palmitic (C16:0)7.5–10.2
Stearic (C18:0)2–4
Oleic (C18:1)4.5–10
Linoleic (C18:2)0.7–2.5

Lauric acid at 45–56% is the headline figure. A result well outside these ranges suggests blending and should trigger a supplier investigation.

Contaminant Limits

ContaminantAPCC limit (mg/kg)
Iron (Fe)Max 5
Copper (Cu)Max 0.4
Lead (Pb)Max 0.1
Arsenic (As)Max 0.1

Iron and copper also matter for shelf life, because both speed up oxidation. Your destination market may set its own contaminant limits, so check them alongside the APCC figures.

How to Read a VCO Certificate of Analysis

A COA is only useful if you check it against your specification for every lot. Use this checklist when a shipment arrives.

  • Lot number matches the drums or cartons received.
  • Test date is close to the production date, not months earlier.
  • FFA, moisture and PV are each within your specification.
  • Method is stated for each test (for example, FFA as lauric acid).
  • Fatty acid profile is included on first orders and at agreed intervals.
  • Organic status matches your certificate, and US shipments carry a NOP Import Certificate.

For a first order, ask the supplier to send a pre-shipment sample so your own lab or a third-party lab can test it against the COA.

Packaging, Storage and Shelf Life

VCO melts at around 24–25°C, so it arrives solid in cool climates and liquid in warm ones. This is normal and does not affect quality. Warm drums gently to liquefy before pumping, and avoid high heat, which raises peroxide value.

FormatSizesMOQShelf life
Bulk drums200L1 drum24 months
Retail glass or PET250ml, 500ml, 1L500 units24 months

Store VCO sealed, away from light and heat, to keep peroxide value low through its shelf life. See our guide to MOQs for drums and container loads to plan order size.

How to Choose a Virgin Coconut Oil Supplier

Ask the supplierWhy it matters
Do you test FFA, moisture and PV on every lot?Lot-by-lot testing is the only proof of freshness
Can you share a recent COA and fatty acid profile?Shows real results, not just stated limits
Do you press from fresh kernel or copra?Virgin oil must come from fresh kernel
Are you a manufacturer or reseller?Manufacturers control raw material and storage
Which certifications cover the VCO?Organic and food safety claims must match the SKU

Econutrena presses VCO from its own plantations, so raw material freshness is controlled from harvest. As a bulk virgin coconut oil supplier, we can ship VCO in the same container as organic coconut cream bulk and other coconut ingredients. Brands can also launch private label coconut oil in glass or PET. Download certificates for USDA Organic certified virgin coconut oil, read about US import requirements for coconut ingredients, or see our guide to coconut cream for plant-based dairy. Virgin Coconut Oil Specifications: Frequently Asked Questions

What is the maximum free fatty acid for virgin coconut oil?

The maximum free fatty acid for virgin coconut oil is 0.2%, measured as lauric acid, under the APCC standard. Higher FFA usually points to old or damaged raw material.

What is a good peroxide value for virgin coconut oil?

A good peroxide value for virgin coconut oil is 3 meq/kg or lower, which is the APCC limit. Fresh, well-stored VCO is often well below this.

What is the moisture limit for virgin coconut oil?

The moisture limit for virgin coconut oil is 0.1% under the APCC standard. Low moisture protects the oil from spoilage and supports a 24-month shelf life.

How much lauric acid is in virgin coconut oil?

Virgin coconut oil contains 45–56% lauric acid under the APCC standard. Lauric acid is the main fatty acid in coconut oil and a key purity check.

Is "extra virgin coconut oil" different from virgin coconut oil?

No, there is no international standard that defines extra virgin coconut oil. Buyers should judge quality on FFA, moisture and peroxide value, not the label term.

Why is my virgin coconut oil solid?

Virgin coconut oil is solid because it melts at around 24–25°C. This is normal and does not affect quality; warm it gently to liquefy.

What is the MOQ for bulk virgin coconut oil?

The MOQ for bulk virgin coconut oil from Econutrena is one 200L drum. Retail VCO in glass or PET bottles starts at 500 units.
